I hope FF7 HD keeps the fixed camera angles. I think those camera angles are a big part of what helps make the PS1 FF games look really good and have impact on locations without even having a cutscene in them.
That said I like fixed camera angles in general because they add a lot to presentation. I’m a heretic.
